Manager indicated that a remodel for an additional pizza prep area has been put on hold, and the original handwashing sink in the retail area was removed. Handwashing sinks are required within 25 feet of food preparation areas without a door or any obstruction between. Reinstall the handwashing sink as required. PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals.....In a sanitizer spray bottle, observed quaternary ammonium concentration over 500ppm. Maintain the solution at 200-400ppm, per label instructions. The solution was emptied down the drain. Use available test strips to verify proper dilution of the quat concentrate.

Ensure the PIC is an ANSI-certified food protection manager, and maintain the certificate available for review. This establishment is not participating in the award program at this time and had 1 Priority, 3 Priority Foundation and 1 Core Violations on this inspection. No County legal action will result from this inspection. The F'real Machine has been removed. Emailed and printed inspection report.
