PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. .......Ham under temperature control, stacked high in pan in top of cold table above proper fill level, at 53*F internally. Manager stated ham had been put in pan less than one hour and returned it to the walk-in to re-cool. The ham in the lower part of the pan was properly cold. Please do not over-fill top cold table pans. Cold-held TCS food must be maintained 41*F or below.
