Observed pizza sauce and shredded mozzarella at 45-53*F in pizza prep fridge FOH. Unit observed at 49-54*F. PIC stated unit is turned off every night and turned on when prep starts around 11:30am. Establishment has adequate other cold holding units and agrees not to use pizza fridge until observed at 41*F. PIC stated items were in unit since 11:30 or beyond and voluntarily discarded. TCS items must be at or below 41*F to prevent growth of bacteria.
