PIC stated the ham was placed in the cooler about 1 hour ago and moved it to another cooler for cooling and continued cold holding. The cooler was maintaining an ambient temperature of 50*F. Creamer cooler near drive-thru was found with creamer with internal temperature of 53*F. PIC stated the creamer was placed in the cooler about 2 hours ago and moved it to another cooler for cooling and continued cold holding. The creamer cooler was providing an ambient temperature of about 58*F. Both coolers will not be used to cold hold TCS food items until they are repaired/replaced and able to maintain an ambient temperature of 41*F or below. Alternative coolers are nearby to continue normal operations. The walk-in cooler was found with an ambient temperature of 53*F at the start of the inspection. PIC stated the walk-in was left open during a delivery. A food item that was present in the cooler showed an internal temperature of 44*F. The connected freezer door was proper open to aid in cooling the walk-in down. The walk-in was last known to have an ambient temperature of below 41*F at 8:00 AM and will be monitored to ensure it continues to maintain an ambient of 41*F or below after cooling down again. Please ensure cold held TCS food items are maintained at 41*F or below.

The cheese was still present towards the end of the inspection about 12:50 PM. PIC had the cheese discarded. Please ensure time control policy is follow and items are discarded upon reaching their discard time.

Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence - About 10-15 drain flies present in lobby soda fountain area. Pest control was last administered 9/5/22. PIC stated they have contacted pest control about 3 weeks ago in regards to the issue and have yet to hear back. Please contact pest control again to have them administer treatment prior to re-inspection within 10 days. Core-6-202.15, C: Outer Openings, Protected - For duration of inspection the side door to the dry storage area was left ajar. About 3-8 house flies were observed throughout the facility with increasing amounts noticed during inspection. The air-curtain at the drive-thru window was also not operating properly until it was adjusted and flies were observed in the drive-thru area also. Please ensure outer openings are protected with effective methods to prevent access to pests.
