Discussed that quat sanitizer concentration should be maintained between 150-400ppm per manufacturers instructions and verified with a chemical test strip. Discussed using cold water to accurately test the sanitizer. The manager called the chemical supply company to service the unit at the time of inspection. The manager stated the dishes should be transported to another department to be cleaned. Discussed re-sanitizing any dishes that had recently been washed.
