PRIORITY VIOLATION-4-602.11, P: Equipment Food-Contact Surfaces and Utensils-Frequency.........Cleaning logs for three in-use slicers with food debris indicated last wash-rinse-sanitize had been done about 6 hours before (in 74*F room). No employees present could verify the slicers had been properly sanitized since that time. Manager had slicers washed-rinsed-sanitized at time of the inspection. Manager stated proper cleaning schedule will be maintained and logs will be filled out.

PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding...........Portioned sides (cooked green beans, corn, mashed potatoes and mac & cheese) in top steamer drawer of hot case at 128*F to 129*F internally for an unknown time. Embargoes, manager discarded. Manager turned temperature on drawer up. Discussed using hot water whenever filling the steamer drawer to ensure TCS food maintain above 135*F. TCS items in dry bottom drawer, at higher setting, were above 135*F.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding.........Cut tomato held in plastic container on top of two other containers in in on top of cold table at 58*F internally for an unknown time. Embargoed, manager discarded. Discussed holding TCS foods below proper fill level to ensure they are maintained 41*F or below.
