Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment-----Observed the walk in freezer door gasket in disrepair or missing in places. Also observed the door unable to fully lock in place. All equipment must be maintained in good repair. Discussed that the missing gasket may be the cause of the ice buildup inside the unit and around the door. Must repair/replace prior to next routine inspection.

Also observed rough flooring at the walk in freezer entrance and interior exposed aggregate rock showing in multiple areas. Repair/replace areas prior to the next routine inspection and maintain all surfaces smooth and easily cleanable.

This establishment received a(n) A Grade and had 0 Priority, 0 Priority Foundation and 2 Core violations on this inspection. Of note: - Discussed adding a hot water recirculator/repairing exiting recirculator to ensure hot water is available to all sinks within 45 seconds to support proper handwashing. Currently the average time for hot water is approximately 2-3 minutes. - Discussed adding a splash guard to the hand sink near the slicers to prevent contamination of the prep table where food is prepared. - Establishment is using an outdated guideline for cheese date marking. Reviewed date mark exempt cheeses and cheeses requiring a 7 day date mark. All cheeses observed held within the 7 day mark requirement but multiple cheeses are labeled with the incorrect discard date. Notice of Inspections Rights were verbally reviewed with manager, Froilan R. A copy of the report was emailed to the manager. No County legal action will result from this inspection.
