The person-in-charge was immediately notified, but failed to instruct the worker to wash his hands. The worker touched his face again with his bare hands, and donned gloves, without first washing hands, to assist another customer at the same case. After instruction by inspector, the worker washed his hands. Please review handwashing requirements with staff as needed.

At the bottom of the log, instructions note to provide "sell-by" dates; however, after discussion with staff, it was determined that start dates are being noted. Please follow written procedures and train staff as needed or rewrite the procedures to reflect the practices being carried out by staff. Email photo of corrected datemarking log to inspector within about a week.

Core-3-305.14, C: Food Preparation.....In back meat wrapping/grinding room, observed a worker power spraying an apron at the three compartment sink with unpackaged raw meat on a rolling cart about three feet away. Ensure unwrapped foods are protected from sources of possible contamination. The PIC and staff were instructed to discontinue spray cleaning with unwrapped meat/food nearby.

e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
