For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ---Cold holding case with salads had the following TCS foods measuring an internal temperature of 49-50'F: ambrosia salad, tapioca pudding, cranberry salad, broccoli cranberry salad, waldorf salad, crab and shrimp salad, chicken salad, pasta salad, coleslaw, orange and roasted apple salad, cranberry pecan salad, caesar pesto salad, greek salad, potato salad, baked beans, and sour cream macaroni salad. Ambient temperature of cooler measured 49.1'F with min/max thermometer. Per department staff all items had been placed into unit from walk-in cooler <4 hours prior. Staff began to remove food to place back into walk-in cooler to cool. Person in charge placed work order.
