Core-4-402.11, C: Fixed Equipment, Spacing or Sealing>>>Observed a build up of grime under and in the cracks of a fixed set of cabinets in the bakery. Person in charge indicated they clean the bakery often but it is difficult to clean under the cabinet and the cabinets need to be sealed between the laminate counters. Discussed with person in charge possibly replacing the cabinets with something easier to clean such as metal prep tables. Establishment must either replace the cabinets or seal and deep clean under the laminate counters.

This establishment is not participating in the award program at this time and had 0 Priority, 0 Priority Foundation violations on this inspection. *Of note: Observed high temperature dish washer with a maximum measured internal rinse water temperature of 148.3*F. The establishment was not washing dishes at time of inspection but they said they had been using it through out the morning. Discussed with establishment ensuring there is a measured rinse temperature of at least 160*F at the plate level of the dish washer using their temperature measuring stickers. Person in charge indicated they would put in a maintenance request for the machine and they would use their chemical sanitizer if an observed water temperature of less than 160*F is observed. A copy of the inspection report was emailed. No County legal action will result from this inspection. On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal.
