Per PIC, the milkshake mixer was used 1 days prior to inspection. PIC washed, rinsed, and sanitized the mixer at the time of inspection. Discussed cleaning frequency of food contact surfaces with the PIC. Discussed the importance of storing all food contact surfaces clean.

PIC voluntarily discarded items at time of inspection. Discussed date marking procedures with the PIC. All RTE/TCS foods must be date marked after 24 hours and sold or discarded after 7 days (including the day it was made as day 1).

PIC stated this is a new issue that is currently being addressed. Servicing has been scheduled for this unit. All plumbing systems must be maintained in good repair. Repair/replace prior to next routine inspection.

This establishment received a(n) C Grade and had 2 Priority, 1 Priority Foundation and 1 Core violations on this inspection. Of note: Bar warewashing unit was unable to dispense chlorine sanitizer at an appropriate concentration of 50-100PPM during final sanitizing step. Warewashing unit was not in use at time of inspection. Discussed 'wash, rinse, and sanitize' process with PIC. PIC set up 3-comp sink to facilitate proper dish washing procedures until repairs can be made to the warewashing unit. A reinspection will occur on 6/1/2023 to verify that violation #46 has been corrected. A pattern of non-compliance is developing for Priority violation # 46, 4-302.14, which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Report emailed to PIC. No County legal action will result from this inspection. The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal. Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
