Priority Foundation-3-501.15 (A), Pf: Cooling Methods.--Cooked chicken observed cooling while wrapped in plastic portion bags at 50 degrees Fahrenheit 5 hours after cooling process began. Cool chicken down on sheet pans or shallow containers before portioning in bags. Chicken placed on sheet pans in front of condenser in walk in refrigerator to rapidly cool. Priority Foundation-2-501.11, Pf: Clean-up of Vomiting and Diarrheal Events--Establishment does not demonstrate the ability to provide procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment. Written clean up procedures provided at time of inspection. Please updated letter from seafood provider for parasite destruction of raw fish used in sushi. No County legal action will result from this inspection.
