Per PIC, rice was prepared 3-4 hours prior to inspection and is used for sushi. The rice was discarded by the PIC. Discussed proper hot holding and time as a control. Provided time as a control guidance document. Hot food must be maintained at 135'F at all times.

Priority Foundation-7-102.11, Pf: Common Name-Working Containers-----Observed spray bottle containing a purple chemical labeled as glass cleaner. Per employee, bottle contains degreaser. Bottle was labeled as degreaser at the time of inspection. Discussed importance of proper chemical bottle labeling. Repeat violation. This is the third consecutive violation.

Core-3-304.12 , C: In-Use Utensils, Between-Use Storage-----Observed rice scoop stored in room temperature water by rice warmers in kitchen. PIC removed the scoops from the water and properly stored the rice scoop dry during inspection. Discussed proper storage methods for utensils between uses at the time of inspection. In-use utensils must be stored in hot water above 135'F, in running water, or dry and washed, rinsed, and sanitized every 4 hours.

Core-6-501.12, C: Cleaning, Frequency and Restrictions-----Observed an accumulation of organic matter throughout and heavy accumulation of dirt on ceilings. Also observed an accumulation of a white, powdery substance lining the ground around the perimeter of the establishment. PIC identified as boric acid. Must conduct a thorough deep-clean of the facility prior to next routine inspection. Must eliminate boric acid prior to re-inspection (see general comments for additional information). Repeat violation. This is the second consecutive violation. Core-6-501.114, C: Maintaining Premises, Unnecessary Items and Litter-----Observed several unused table tops, 3-compartment sink in disrepair not used by establishment, prep sink in disrepair not used by establishment, unused Pepsi cooler, and excess storage bins not in use by establishment. Must remove all unnecessary items prior to reinspection (see general comments for additional information). Repeat violation. This is the 10th consecutive violation.

Inspection Comments

This establishment is not participating in the award program at this time and had 1 Priority, 1 Priority Foundation and 5 Core Violations on this inspection. Due to the violations noted on this inspection report, County legal action may result from this inspection. Owner denied inspector entry to non-functional walk-in cooler closed with a piece of wire during inspection. Owner stated they did not have keys. Discussed with owner that the wire string didn't require keys to open. Reviewed premises definition with owner during inspection. Owner indicated they were denying entry to the space and inspector could not open door during inspection. For violation #53, prior to 11/1/2021 must address the following items: 1. Remove unused prep sink in disrepair. Currently indirectly plumbed. Disconnect water lines at angle stop and unscrew 6 screws from wall to remove. 2. Remove unused 3-comp sink in disrepair. Currently directly plumbed. Cap drain line with ABS/PVC and disconnect water lines from angle stops to remove. Unscrew screws holding to wall to remove. 3. Deep clean reach-in cooler. 4. Remove unused storage bins. 5. Remove at least half of unused table tops. 6. Remove unused Pepsi cooler. 7. Clean metal stands. 8. Clean all boric acid from facility. 9. Clean back unused bathroom. 10. Neatly organize all remaining items in a way that prevents harborage conditions. Inspection rights acknowledged by Christiana C. Report emailed to Christiana C. OF NOTE: Discussed replacing broken lighting in back area, replacing missing ceiling tiles and water damaged ceiling tiles, repairing grout worn down in various areas in back of house, and labeling bulk storage containers for dry goods not easily identifiable. Discussed MCESD's pattern of non-compliance policy.

e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
