PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed containers of yogurt and shredded cheese in reach-in refrigerator measuring 48 - 52 degrees F. Cook stated the food items had been in the refrigerator for greater than 4 hours. Advised cook and person in charge (PIC) that the food items are time/temperature control for safety (TCS) foods, which must be held below 41 degrees F. Ambient temperature of the refrigerator was 41 - 43 degrees F using refrigerator thermometer and food probe thermometer. Foods on top section of refrigerator were 41 degrees F, while foods in lower section of refrigerator were above 41 degrees F. Discussed with cook and PIC not overstocking refrigerator to facilitate adequate air flow so all food items in refrigerator maintain below 41 degrees. PIC stated they will have the refrigerator inspected to ensure it is operating properly. Cook discarded the food items.
