Observed ambient temperature of kitchen reach-in refrigerator at 47 - 49 degrees F using min/max thermometer. After several minutes the refrigerator was not cooling back down. Refrigerator was holding time/temperature control for safety (TCS) foods at time of inspection, but foods were below 41 degrees F. Advised person in charge (PIC) that refrigeration units which hold TCS foods must hold such foods at 41 degrees F or below. PIC contacted a technician to have the refrigerator inspected and/or repaired. Advised PIC to use shelf stable foods or cook foods from frozen until reach-in refrigerator is holding TCS foods below 41 degrees F.

Core-2-102.12(A), C: Certified Food Protection Manager (CFPM): On duty Manager does not have a CFPM. Advised Person in Charge (PIC) that the PIC shall be the Certified Food Protection Manager, and per paragraph 2-101.11, and be present during all hours of operation. PIC stated they will obtain a Food Protection Manager certification as soon as possible. The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal.
