PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals.............Chlorine in spray sanitizer bottle at 200 ppm. Employee discarded. Employee stated quaternary sanitizer is usually in-use. Residual chlorine was still present in the blue sanitizer bucket, but the log sheet entry was for 200-400 ppm concentration, as if for quaternary ammonia. Do not mix chlorine and quaternary sanitizers together. Please ensure employees are trained in which chemicals are used and how to mix them to proper concentration.

Reviewed illness policy, dishwashing, sanitizers, date marking and calibrating thermometers with PIC. No County legal action will result from this inspection.
