Priority Foundation-4-301.11, Pf: Cooling, Heating, and Holding Capacities-Equipment. ......Sandwich cooler holding TCS food 45-50*F, while thermometer on unit read 38*F at time of inspection. Walk-in holding a small amount of milk labeled for refrigeration holding at 60*F. Please repair to ensure units hold TCS food 41*F or below prior to reinspection. Do not use units for TCS food until they are repaired and holding properly cold. Will reinspect 7/21/22. Manager stated walk-in compressor is down and repair may take longer. Directed operator to store TCS food in dairy cooler or under-counter reach-in, both holding properly cold. Please contact EHS when unit is repaired.
