Priority Foundation-4-301.11, Pf: Cooling, Heating, and Holding Capacities-Equipment. ...... Walk-in holding milk labeled for refrigeration holding at 60*F. Manager had determined walk-in was down previous day and milk was still in unit, but not stored in an area where it could be reached by customers. Manager discarded the milk. Please repair to ensure unit holds TCS food 41*F or below prior to reinspection. Do not use unit for TCS food until it is repaired and holding properly cold. Will reinspect 7/21/22. Manager stated walk-in compressor is down and repair may take longer. Please contact EHS when unit is repaired. Directed operator to store TCS food in dairy cooler or under-counter reach-in, both holding properly cold.
