PIC swapped the foods so the chicken was on bottom and the beef above it. Raw animal foods shall be separated from each other during storage, preparation, holding and display by using separate equipment for each type, arranging each type of food in equipment so that cross contamination is prevented, and preparing each type of food at different times or in different areas.

PIC stated the foods had been delivered approximately an hour prior to this inspection. This statement was verified with an invoice provided to the inspector by the PIC. The foods in question were moved to properly functioning cold holding units and the PIC placed an emergency work order to have the walk in refrigerator serviced. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. A reinspection was scheduled for June 15, 2020 to verify the walk in refrigerator is maintaining a temperature of 41* Fahrenheit or below.

PIC placed an emergency work order to have the unit serviced. PIC was made aware that no TCS foods may be kept in the refrigeration unit in question until it can maintain an ambient temperature of 41* Fahrenheit or below. Always maintain cold holding units at 41* Fahrenheit or below. A reinspection will take place on June 15, 2020 to verify the walk in refrigerator is maintaining a temperatures of 41* Fahrenheit or below.

Due to COVID-19 concerns a signature was not obtained from the operator during this routine inspection. The inspector verbally reviewed the establishment's inspection rights with the person in charge (Al C.) and delivered a copy of their inspection rights in an email with the inspection report This establishment is not participating in the award program at this time and had 2 Priority, 1 Priority Foundation and 0 Core Violations on this inspection. A pattern of non-compliance is developing for Priority violation # [13], [3-302.11], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. No County legal action will result from this inspection. A reinspection will take place on June 15, 2020 to verify the walk in unit has been serviced and is functioning correctly. Inspection report delivered via email.
