Observed raw packaged chicken stored above ground beef in reach-in. Observed raw beef stored above raw pork in reach-in cooler. Ensure all raw animal proteins are below RTE foods and organized raw animal proteins by cooking temperature at the time of the inspection. All raw animal proteins must be stored below RTE foods and stored according to cooking temperature at all times to prevent cross contamination. Discussed the importance of proper food storage to prevent cross contamination.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods - Observed multiple holes in the walls and ceilings of throughout the establishment. Observed gap under the door to the exterior from the kitchen back hallway to the bathroom allowing visible light to pass through from the exterior. Outer openings must be protected from the exterior at all times to prevent the entrance of pests. Discussed the importance of maintaining walls smooth and easily cleanable. Re-seal so that areas are smooth, easily cleanable, and prevent the seepage of liquid. Repair prior to next routine inspection. Repeat violation. Core-6-501.12, C: Cleaning, Frequency and Restrictions - Observed a significant amount of soil/debris build up on the walls, floors, and under equipment. Physical facility is not cleaned as frequently as necessary. Clean prior to next routine inspection.

This establishment received a B Grade and had 1 Priority, 2 Priority Foundation violations on this inspection. Core-2-102.12(A), C: Certified Food Protection Manager Observed no Certified Food Manager (CFM) onsite at time of inspection. Person in charge was unable to produce a certified food protection manager certificate. A CFM is required to be on the premises during all hours of operations. Provide a CFM onsite by next routine inspection. Of Note: - Observed grinder in walk-in cooler with no handwashing sink. Did not observe the grinder actively being used at time of inspection. Discussed with PIC about removing grinder from the walk-in and utilizing the grinder in the prep area where a hand sink is accessible. Discussed with PIC about cleaning frequency of the grinder at varying temperatures. - Inspection conducted with RS# 1458. - On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal.
