For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding........In produce/dairy walk-in cooler/56F observed TCS food holding over 41F including various dairy/55F, butter/50F, various cheeses/55F, cut leafy greens/ 55F, etc. Observed the condenser frozen on back side of unit. Also observed meat walk-in cooler down with foods already removed from the unit. Maintain cold TCS food at or below 41F. TCS foods were voluntarily discarded. Repair main walk-in coolers within 24 hours. Staff to use prep coolers, reach-in refrigerators and freezers, and walk-in beer cooler as needed until the two main storage walk-in coolers are repaired.

A new permit may need to be obtained if you are unable to prove that an ownership change has not occurred.
