PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed low-temp mechanical dishwashing machine utilizing chlorine to sanitize to have a concentration of 0ppm. PIC stated dish washer was used recently. Primed machine multiple times and observed below 50ppm. Observed sanitizer line to not be effectively pulling sanitizer into machine. Had PIC set up three compartment sink and observed quat sanitizer at sink to be above 150ppm. PIC called for maintenance and agrees to use three compartment sink until dish washing machine is observed at 50-100ppm of chlorine. Chlorine concentration must be between 50-100ppm for proper sanitation.

A pattern of non-compliance is developing for Priority violation #14, 4-501.114, which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Of note: Observed temperature log attached to low-temp dishwasher for logging final rinse temp of machine. Discussed with PIC that the chlorine concentration is what sanitizes the dishes with a low-temp machine. Recommend changing/adding log to check chlorine concentration level everyday to assess the machine. This establishment received a B Grade and had 1 Priority, 0 Priority Foundation and 0 Core violations on this inspection. No County legal action will result from this inspection. Report emailed to PIC.
