Observed chlorine warewashing machine with a concentration of 0ppm after running three cycles. Attempted to prime machine, sanitizer looks to not be pulling into machine. Chlorine concentration must be between 50-100ppm to effectively sanitize. Had PIC set up three compartment sink and PIC agreed to use three compartment sink until warewashing machine can be serviced. Verifying sanitizer concentration prior to using ensures food contact surfaces are being fully sanitized.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
