PRIORITY VIOLATION-3-202.11 (A) (C) (D), P: Temperature; Receiving. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4619/AMC-Toolbox---Approved-Source. - Observed food being delivered to establishment at improper temperatures. At time of inspection, food containing various TCS (meat and cheese products) and shelf stable foods was delivered and placed into reach-in refrigerator. Food was not screened by staff prior to being accepted. In crate of food containing various box lunches (which contained meat and cheese), internal temperature of the food products ranged from 52-58 degrees. According to delivery staff, these food products had been in transit from the original processor permit since 7:30 am and therefore food may have been out of temperature for up to 3.5-4.0 hours. Processor permit is located at another Kyrene School in Ahwatukee. The food was not embargoed although informed staff that this food should not be used past today. Foods requiring refrigeration must be delivered at 41 degrees or less. This violation is documented if establishment accepts the delivery and regulatory authority verifies the food products are out of temperature.
