Observed containers of cream cheese date marked 9/27 and large container of whipped butter without an opened date marking label in kitchen reach-in refrigerator. Food service employee did not know when the butter was opened. Food items were held longer than 7 days. Advised person in charge (PIC) that ready to eat (RTE), time/temperature control for safety (TCS) foods must not be held longer than 7 days. Employee discarded the food items and PIC stated they will ensure RTE/TCS food are not held longer than 7 days.

Core-4-602.13, C: Nonfood Contact Surfaces Observed some dried debris in utensil storage drawers underneath kitchen prep counter. Advised person in charge (PIC) that non-food contact equipment which holds utensils and dishware must be cleaned to sight and touch and at a frequency to prevent debris/residue build-up. PIC stated they will have the storage drawers cleaned as soon as possible.

This establishment received a(n) B Grade and had 1 Priority, 0 Priority Foundation and 1 Core violations on this inspection. Delivered CARL to Director, verified same ownership. Director has a current CFPM certification and is the only person at business with this certification. Recommend having an additional manager or food service employee obtain a CFPM to ensure a person in charge with a CFPM is always present during food operations. Recommend keeping ice readily available to verify/calibrate accuracy of food probe thermometer. Discussed ensuring not overstocking reach-in refrigerator to ensure adequate air flow to keep TCS foods below 41 degrees F. Also, recommend designating a section in refrigerator for employee foods, to separate from children's foods. No County legal action will result from this inspection. Emailed inspection report.
