PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed containers of cream cheese, sliced/shredded cheeses, and hummus in reach-in refrigerator measuring 48 - 49 degrees F. . Person in charge (PIC) stated the food items had been in the refrigerator for greater than 4 hours. Advised PIC that the food items are time/temperature control for safety (TCS) foods, which must be held below 41 degrees F. Ambient temperature of refrigerator was 38 - 42 degrees F; however food on upper shelves of refrigerator were below 41 degrees F, and food on lower shelves were above 41 degrees F. Discussed with PIC separation of foods on shelves to ensure cold air flow and uniform temperature of 41 degrees F throughout refrigerator. PIC discarded the food items and stated they will ensure TCS foods are held at proper temperatures.

This establishment received a(n) B Grade and had 1 Priority, 0 Priority Foundation violations on this inspection. Core-2-102.12(A), C: Certified Food Protection Manager (CFPM): The Director with the food protection manager certification was not present during inspection. Advised Person in Charge (PIC) that the PIC shall be the Certified Food Protection Manager, and per paragraph 2-101.11, and be present during all hours of operation. PIC stated they will ensure a Food Protection Manager is present during food operations. 2ND CONSECUTIVE VIOLATION. The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal.
