Observed double door reach in cold holding unit at a temperature of 45.1 deg F ( according to the min/max thermometer) TCS food items that were currently holding in unit were holding under time as a public health procedure and the initial time and temperature was documented on time log. Currently there were no other TCS food items cold holding in unit. Manager informed unit is used for holding TCS food under temperature control There are other units in establishment for cold holding until repair is completed. Must maintain cold holding units at required <41 deg F at all times.
