PRIORITY VIOLATION-7-201.11, P: Separation-Storage >>> At outdoor server station, near front entrance, observed a spray bottle of glass cleaner and a container of powdered cleanser stored on top of ice machine next to two ice buckets. Toxic substances shall be stored to prevent contamination of food, equipment, utensils, linens, and single-service and single-use articles. Discussed with Person in Charge (PIC) importance of proper storage of toxic substances. PIC moved glass cleaner and powdered cleaner for proper storage.

Core-4-101.11 (B-E), C: Characteristics-Multiuse; Durable, Nonabsorbent, Smooth, Easily Cleanable >>> On shelving in warewashing area, observed two sets of tongs with food-contact portion wrapped in foil. Per Person in Charge (PIC), tongs were stored as clean and used to serve tortillas. Materials that are used in the construction of utensils and food-contact surfaces of equipment shall be durable, corrosion-resistant, and nonabsorbent; finished to have a smooth, easily cleanable surface; and resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition. PIC removed foil and moved tongs to be warewashed.
