Cooling unit measuring internal temp 53*f with max/min thermometer. Salsas and horchata discarded at time of inspection. Unit should be checked regularly to ensure proper cold holding temperatures. PIC will not use unit for TCS food times and has technician that will come in a couple days.

This establishment received a(n) D Grade and had 3 Priority, 2 Priority Foundation and 2 Core violations on this inspection. Due to the violations noted on this inspection report, County legal action may result from this inspection. Inspection conducted with RS 1035 ***A pattern of non-compliance for (2) different foodborne illness risk factors violations has been noted during this inspection: #19 (3-501.16(A)(1), PRIORITY) [3 times in a row!!] #20 (3-501.16(A)(2) and (B), PRIORITY) [2 times in a row!] The Pattern of Noncompliance handout detailing repeat violations and legal process was given to PIC. An Active Managerial Control Intervention Plan visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Due to 3rd repeat for Violation #19, AMC class offered to PIC, and was enrolled to next open class; tomorrow, 7/19/17. *Inspector also discussed chemical concentrations in sanitizer buckets, base boards, flooring/tile, and labeling for chemicals and food.

e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
