Observed three compartment sink with 10 PPM of chlorine sanitizer. PIC added more chlorine at time of inspection to bring sanitizer levels to 50PPM. PIC had employee purchase more bleach because PIC was waiting for new shipment to arrive. Please place orders accordingly to ensure there is always sanitizer on site at all times.

Observed pizza in freezer cart at 59*F. PIC stated it was less than half an hour since pizza was left in cart and removed from freezer. Pizza was moved into oven at time of inspection. All cold held TCS foods must be kept at or below 41* at all times and held in refrigerator until it is ready to be cooked.
