Observed employee manually washing three pans in back three comp sink. When at the sanitization step, employee did not fully submerge the pans in the sanitizer and only splashed the dishes with the sanitizer for less than 15 seconds. At time of inspection, employee properly sanitized the pans by fully submerging the three pans in the sanitizer for a full 60 seconds. After being cleaned, equipment food-contact surfaces and utensils shall be sanitized according to the manufacturer's recommendations for sanitization contact time.

This establishment received a(n) B Grade and had 1 Priority, 0 Priority Foundation and 0 Core violations on this inspection. Of note: Reviewed approved backflow and plumbing requirements for combi oven and reverse osmosis (RO) system. Currently a double check backflow assembly is installed upstream from oven and RO system. Copper piping is currently installed downstream from backflow device supply RO system. For an approved plumbing installation, an RPZ (meeting ASSE standard 1013) must be installed in place of double check assembly and all piping (including fittings) downstream from backflow device must be stainless steel, pex, or plastic (due to RO system). Reviewed corrected prior to next inspection. Notice of Inspection Rights verbally acknowledged by Adam B. Inspected with RS # 1206 Report emailed. No County legal action will result from this inspection.
