This establishment received a(n) A + Grade and had 0 Priority, 0 Priority Foundation and 0 Core violations on this inspection. This establishment is on the Cutting Edge of food safety and was awarded an “A” grade. PIC provided proof of scheduled exam to obtain food manager license. Ensure it has been obtained prior to next routine inspection. Of note: Currently at the combi oven, a double check valve (ASSE 1015) is installed with copper downstream from backflow assembly. Downstream from backflow assembly is copper lines leading to 3 manifolded water lines (one water line non-filtered to top combi oven, one water line non-filtered to bottom combi oven, and one water line to feed RO system). An RPZ (ASSE 1013) is required for combi ovens or RO systems. Any plumbing (lines or fittings) downstream from backflow device must be pex, stainless, or plastic if feeding an RO system. Options to correct include: 1. Double check valves are not approved for combi ovens or RO systems. An RPZ will be required. 2. Establishment could remove RO system and replace with non-RO filter assembly. Establishment will need to provide an RPZ and certify. No other piping will need to be changed (due to RO system being removed). 3. Establishment could replace copper manifold piping/fittings with pex/stainless piping. Establishment will need to provide an RPZ and certify. 4. Additional options may be explored for correction as provided by school/district. Must updated inspector on status of repairs prior to 8/19 and a written timeline must be provided for correction. Notice of Inspection Rights signed by Veronica P. Report emailed.
