The manager stated that the sanitizer is changed during after the mid-shift break. Observed a chemical test strip at the bottom of the compartment. Discussed that the sanitizer may not have been adequately mixed in the large sink and may have tested at the appropriate levels. Discussed that quat should be mixed according to the manufacturers recommendation (200-400ppm) and washed items should have a total contact time of 60 seconds. The manager had additional sanitizer added to the compartment until it measured 200ppm with a test strip.

This establishment is on the Cutting Edge of food safety and was awarded an “A” grade. Notice of Inspections Rights were verbally reviewed with manager, Rhonda L. A copy of the report was emailed to the manager. No County legal action will result from this inspection.
