PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. >>> At 3-compartment sink, observed Quaternary sanitizer measuring 0 ppm using test strips. Per Person in Charge (PIC) automatic Quat dispenser was serviced two days prior. For proper sanitization of food contact surfaces/equipment, Quat sanitizer must be between 150-400 ppm. PIC contacted service vendor for automatic Quat dispenser, drained sanitizer compartment and refilled with a Quat solution of 200 ppm when measured with test strips. After discussion with PIC, it has been determined that the root cause of the violation was verification.
