Observed employee washing dishes at three compartment sink in kitchen that utilized chlorine to sanitize. Observed employee to dunk dishes in sanitizer for less than 5seconds and place on drying rack. Had employee re-sanitize dishes for 10 seconds. Dishes must be fully submerged in chlorine sanitizer for a minimum of 10 seconds for proper sanitation.

Person in charge was unable to produce a certified food protection manager certificate. A CFM is required to be on the premises during all hours of operations. Provide a CFM onsite by next routine inspection. Provided link to ANSI accredited companies. This establishment is not participating in the award program at this time and had 1 Priority, 1 Priority Foundation and 2 Core Violations on this inspection. No County legal action will result from this inspection. Report emailed to PIC.
