Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence ===> Observed 10-15 live fruit flies in the dish washing area and near the walk-in cooler. Did not observe any fruit flies in contact with food or food-contact surfaces. Also observed 4 dead mice in traps, set under racks/equipment. All of the observed traps set in areas that will prevent potential food/equipment contamination. According to PIC, a pest control technician placed the traps and sealed all voids and penetrations inside of the establishment the day prior to inspection. The front doors were also adjusted to be tight-fitting. Discussed removing any unnecessary litter/items, keeping all food covered and protected, and continuously cleaning food and soil debris to eliminate any harborage conditions. The pest control tech is scheduled to visit the establishment every day or every other day to remove rodents and re-set traps. Carcasses must be removed promptly. A re-inspection for the flies and rodents will be conducted in 10 days. Please provide pest records.

Core-6-501.12, C: Cleaning, Frequency and Restrictions ===> Observed an accumulation of dust/grease on the vents and ceiling tile grid in the pizza oven and hot box area. The ceiling tiles have recently been replaced. Discussed cleaning the grid and vents in order to prevent dust or debris falling into food from the ceiling above. PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them clean.
