PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. ====Observed several tcs food products inside the main walk in unit in temperature danger zone (41*F-135*F). Several packages of Cooked ham at 50*F-55*F; several packages of cooked sausage at 50*F-55*F. Notified Person In Charge (PIC). Ambient temperature of main walk in unit is at 48.7*F with min/max. Also observed cases of Mozzarella cheese at 48*F; Pepperoni at 55*F. Notified PIC. Discarded packages of cooked ham and cooked sausages. Also observed main pizza unit is at 57*F with min/max thermometer. String cheese at 55*F; cooked sausage on the line at 50*F; cooked ham on the line at 50*F. Notified PIC. Discarded listed improperly cold holding tcs food products. =======Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Priority Foundation-3-501.19 (A1, B2, C2-3), Pf: Time as a Public Health Control; Documentation. =====Observed establishment is using time as control for food safety. Observed two racks and three zones with prepared pizzas inside zones with no timers started or present. Notified Person In Charge (PIC). Per PIC the pizzas were recently prepared. PIC started timers to pizza zone racks. ======If utilizing 4 hours and no temperature control: The food has to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature control.
