Observed a plastic zip-loc type bag of cooked macaroni pasta in front section of kitchen reach-in refrigerator measuring 47 degrees F. Kitchen employee stated the pasta had been in the refrigerator since the previous day; greater than 4 hours. Advised person in charge (PIC) and employee that the food items are time/temperature control for safety (TCS) foods, which must be held below 41 degrees F. Refrigerator had a lot food and milk stored tightly together. Ambient temperature in back of refrigerator was 41 degrees F, and other food items in front section were 41 - 43 degrees F. Discussed spacing foods in refrigerator to ensure adequate cold air flow so all food items are 41 degrees F or below. Employee discarded the pasta, and PIC stated they will ensure TCS foods are held at proper temperatures.

Advised person in charge (PIC) kitchen surfaces shall be maintained in good repair to ensure they are smooth and easily cleanable. PIC stated they will have the cabinets repaired as soon as possible.

This establishment received a(n) B Grade and had 1 Priority, 0 Priority Foundation violations on this inspection. When thawing raw animal foods in refrigerator, discussed adequate separation of raw animal foods from ready to eat foods. Observed raw shelled unpasteurized eggs in reach-in refrigerator. Kitchen employee stated they eggs are only used for baking. Due to daycare serving a highly susceptible population (HSP), discussed with person in charge and kitchen employee that only pasteurized eggs shall be used unless baking or hard-boiling. Kitchen has residential type reach-in refrigerator. Advised person in charge (PIC) that when refrigerator is replaced, ensure new refrigerator is of "commercial" grade NSF/ANSI type refrigerator. The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal.
