Observed a dicer with remnants of tomato and onion on the blade on a box of onions. Employee had stated that they had used the dicer the previous day to make pico de gallo. Discussed with employee on cleaning the dicer after every use. Discussed cleaning policies and procedures with person in charge. Employee had removed the dicer from the box of onions and had placed it in the three compartment sink to wash, rinse, and sanitize. Training shall occur to verify that employees are aware on proper ware washing policies and procedures.

Person in charge had stated that a exterminator comes and treats the establishment once a month. Person in charge had voluntarily discarded the can of raid. Ensure that only an exterminator is treating the establishment for pests.
