For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4574/AMC-Toolbox---Food-Contact-Surfaces.-----Observed employee grab clean container from equipment shelf in walk-in cooler and wash/rinse/sanitize with less than 10 seconds of contact time with quat sanitizer. Sanitizer was sprayed off with sprayer arm for immediate use. Employee returned container to sanitizer at the time of inspection. Quat sanitizer has a minimum of 30 seconds of contact time required to eliminate foodborne illness causing pathogens. Food contact surfaces that have already been washed/rinsed and properly sanitized, dried and stored as clean to not require any additional warewashing prior to use unless the surface has been contaminated during storage.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods-----Observed water leaking from punch out in top of walk-in cooler and from condensation pan and fixtures attached to cooling unit in walk-in cooler. Water was observed pooling on container lids and dripping into boxes of pre-packaged dressings and sauces. Person in charge relocated boxes and food containers to another shelf at the time of inspection and general manager will have walk-in cooler serviced to repair all leaks prior to next routine inspection.
