Notified PIC and the rice was voluntarily embargoed at the time of the inspection (see embargo from). Discussed with PIC the importance of proper date marking and only keeping date marked TCS foods for 6 days plus the day the day the item is cooked, prepped, opened, etc. Priority Foundation-3-501.17, Pf: Ready-To-Eat Time/Temperature Control for Safety Food - Date Marking. Notified PIC and a small amount of testing paper was provided to PIC until the facility is able to obtain testing strips. A re-inspection was scheduled with PIC for no later than 4/5/2019 to ensure the correction of the violation.
