Core-6-501.111 (A-B, D), C: Controlling Pests; Monitoring Observed rodent droppings in corners and behind/underneath equipment in kitchen. Person in charge (PIC) stated they had a rodent issue but their certified pest control service trapped and removed the rodent. PIC did not have an invoice for the certified pest control service. Advised PIC that areas which process/prepare foods must be free of pests and droppings to prevent contamination of food and food contact surfaces. Also, ensure that premises is only serviced by a certified pest control company. PIC stated they will clean the areas and ensure a certified pest control service is used.

Core-6-501.11, C: Repairing Premises, Structures, Attachments, and Fixtures-Methods Observed broken floor tiles in kitchen area. Advised person in charge (PIC) that flooring shall be maintained in good repair so it is smooth and easily cleanable. PIC stated they will have the floor tiles repaired. Core-6-501.114, C: Maintaining Premises, Unnecessary Items and Litter Observed multiple items stored in kitchen area that are not used for the production of foods. Advised person in charge (PIC) that only necessary equipment used to prepare, store, and serve foods shall be stored in kitchen area to ensure proper cleaning and prevent harborages for pests. PIC stated they will remove unnecessary items from the kitchen. Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed old debris and rodent droppings underneath equipment throughout kitchen. Advised person in charge (PIC) that areas underneath equipment shall be cleaned to sight and touch and at a frequency to prevent debris build up. PIC stated they will have areas underneath equipment cleaned as soon as possible.
