PIC stated that meats are cooked for tamales. A probe thermometer is required for measuring internal temperatures of TCS foods. Probe thermometer provide a means for assessing active managerial control of TCS food temperatures. A re-inspection is scheduled for 10/06/2020.

Advised person in charge (PIC) that only necessary equipment used to prepare, store, and serve foods shall be stored in kitchen area to ensure proper cleaning and prevent harborages for pests. PIC stated they will remove unnecessary items from the kitchen.

Core-2-102.12(A), C: Certified Food Protection Manager ----- No proof of a certified food manager. Discussed with person in charge that there needs to be at least one Certified Food Manager at the establishment at all time. Conducted facilities inspection. PIC stated they will be open once a month moving forward due to staffing shortages. Ensure customer foods are properly labeled and separated from personal foods. No County legal action will result from this inspection. Emailed report.
