Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence ---- Observed multiple spring mouse traps throughout the facility. Informed PIC that the mouse traps are not approved. PIC stated that traps will be removed. Establishment has a monthly pest control service and the pest control company has approved traps around the facility. Advised PIC to have the pest control company add more traps if needed instead of using store bought traps.

Core-3-305.11, C: Food Storage-Preventing Contamination from the Premises ---- Observed boxed of food products stored directly on the floor inside the walk-in cooler. PIC stated that food products will be put on shelves when time allows. Advised person in charge (PIC) that food shall be stored a minimum of 6 inches above floor to prevent contamination from premises.

Core-6-501.114, C: Maintaining Premises, Unnecessary Items and Litter ----- Observed multiple items stored in premise that are not used for the production of foods, including broken equipment. Advised person in charge (PIC) that only necessary equipment used to prepare, store, and serve foods shall be stored in kitchen/production area/retail area to ensure proper cleaning and prevent harborages for pests. PIC stated they will remove unnecessary items. Core-6-501.12, C: Cleaning, Frequency and Restrictions ----- Observed blood and food debris on walk-in cooler floors. PIC stated that one of the meat packages leaked and they had not had a chance to clean up. Areas below equipment and storage racks observed with build up of debris. Please clean below equipment and storage racks in a frequency and manner that prevents build up and prevents attraction of pests.

Discussed with person in charge that there needs to be at least one Certified Food Manager at the establishment at all time. Ensure customer foods are properly labeled and separated from personal foods. No County legal action will result from this inspection. Emailed report.
