Advisory visit conducted by MCESD Spanish Liaison RS 1197 at the request of Establishment Manager and MCESD Supervisor. The following was reviewed with the General Manager, Kitchen Manager and Food Handling Employees at length: 1. Violations noted from previous routine inspection report and observations made during previous advisory visit with General Manager 2. Demonstrated how to properly wash hands at the hand sink and observed employees on 'when to wash' scenarios during their work tasks 3. Spoke with Kitchen Manager about importance of verifying cold, hot and time control logs 4. Establishment NEEDS to clarify and update time control procedures versus Temperature procedures for waffle mix, whole shelled eggs, scrambled liquid eggs, cooked cut potatoes, cooked bacon, scrambled liquid eggs, pancake mix, and French toast liquid egg batter which are all loosely kept on ice on the cook line. 5. Clarified again on the use of chlorine sanitizer test strips since chlorine is the only sanitizer used in the establishment in both wiping cloth buckets and in the automatic dish machine. 6. Reviewed with Manager some active managerial control ideas, or methods to implement 7. Establishment currently has a sink near the server fountain soda tower station, and Manager mentioned establishment will be implementing a bar at the far west side of the dinning room near the end of the server station where toast is made. Provided manager an application to start the remodel process and therefore HIGHLY SUGGEST that the sink near the server fountain soda tower be repaired and converted to a TRUE hand sink (install a splash guard, provide hot and cold water, provide hand soap and paper towels). 8. A Follow up advisory is scheduled for Tuesday January 21, 2020 between 7am, 10 am or 1 pm. No County legal action will result from this advisory visit.
