Per the PIC the foods had been there for about 3.5 hours and were placed on the stove to rapidly reheat. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher.

Core-3-304.14, C: Wiping Cloths, Use Limitation>>>>>Observed the sanitizer solution in the wiping cloth buckets to be measuring 0ppm of chlorine sanitizer. PIC discarded the sanitizer solutions and remade them with the correct chemical sanitizer concentration. Always maintain proper sanitizer concentration levels for whichever sanitizer is being used within the establishment.

Due to COVID-19 concerns a signature was not obtained from the operator during this routine inspection. The inspector verbally reviewed the establishment's inspection rights with the person in charge (John E.) and delivered a copy of their inspection rights in an email with the inspection report. This establishment is not participating in the award program at this time and had 1 Priority, 0 Priority Foundation and 1 Core Violations on this inspection. No County legal action will result from this inspection. Reviewed the establishment's handwashing, glove use, cooling, cold holding & time as a control policies during this routine inspection. Also reviewed the MCESD Legal Action Process with the PIC during this inspection. Inspection report delivered via email.A pattern of non-compliance is developing for Priority violation # 19, 3-501.16 (A)(1), which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action.
