Person in charge (PIC) states they have covered containers specifically for those items but employees must have not had time to place in the appropriate area. Explained to PIC the importance of storing food in covered packages or covered containers to protect from any possible cross contamination. PIC states they will have employees place the open packages of dry foods in the appropriate labeled container.

Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence>>>Observed exposed unused mouse metal snap trap located in the corner of the dry storage area of the facility. PIC states the trap was placed by ECOLAB at last visit. Explained to PIC that all pest control and trapping devices or other means of pest control must be done by the certified applicator and cannot be left in the facility. All devices must protect food and equipment from pests or pests fragments. PIC was able to remove rodent trap at time of inspection.

Core-3-305.11, C: Food Storage-Preventing Contamination from the Premises>>>Observed several packaged boxes of food directly on the floor of the dairy walk-in and freezer. PIC states some of the boxes had been delivered the night before and others this morning. Explained to PIC the importance of keeping all food above 6 inches off the floor to prevent potential contamination. PIC states they will have employee put boxes away.

Wiping cloths; properly used & stored
Core-3-304.14, C: Wiping Cloths, Use Limitation>>>Observed sanitizer bucket containing Ecolab sink and surface sanitizer used to wipe food-contact surfaces with a concentration above the 272-700ppm threshold. PIC states they fill up the buckets from the sanitizer dispenser that is suppose to dispense the appropriate concentration provided by ECOLAB. Explained to PIC that due to the concentration being too high after testing with the appropriate testing strips, it is imperative to have ECOLAB come and service the dispenser to make sure it stays within the appropriate limits. In the meantime, PIC is able to use Quat sanitizer with the appropriate Quat sanitizing strips to use for the wiping cloth buckets until dispenser is fixed.
