Cut tomatoes, cut lettuce, dairy creamer, and cheese with internal temperatures between 52 degrees F and 54 degrees F cold holding in the walk-in cooler. Ambient temperature of the walk-in was determined to be 51.8 degrees F by using a min/max thermometer. PIC stated that temperature of the unit was checked this afternoon and was at 37 degrees F. TCS ingredients in the walk-in were moved to the freezer or placed under time as a control. Service technician is on the way to repair unit. Ensure all cold holding TCS items are held at 41 degrees F or below.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
