PRIORITY VIOLATION-3-301.11, P: Preventing Contamination from Hands; Bare Hand Contact with Ready to Eat Foods. Observed employee bare-hand lime garnishes. Employee was stopped and reeducated on bare-hand contact requirements. Limes which had been in contact with bare hands were removed from the drinks. The employee rewashed their hands and put on gloves before garnishing the drinks with fresh limes. Tongs and gloves were moved to the bar station, at time of inspection. Discussed the appropriate use of both gloves and tong options for garnishing drinks. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff, which resulted in the violation.

Observed bar dishwasher with chlorine sanitizer measuring at 0 PPM, below the recommended range of use (50-100 PPM). Staff confirmed dishes had been run through the bar-dishwasher today. Management was alerted and plans to use the bar 3- compartment sink to sanitize dishes until the unit can be serviced. Third-party servicer was called at time of inspection. Reviewed sanitizer concentration requirements. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff, which resulted in the violation.
