Observed staff at the prep table opposites the three-compartment sink taking bread out of the bag with bare hands for a customer order. The staff was stopped and educated that to prevent contamination from bare hands, exposed RTE foods shall not come in contact with bare hands. Suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment shall be used. Staff corrected by washing hands before putting on clean gloves.
